Risk assessment of the presence of lead in hunted wild boar meat

Italian National Committee for Food Safety (CNSA) opinion No. 18 of 8 marzo 2017 on the Risk assessment of the presence of lead in hunted wild boar meat Wild game meat may have a higher content in lead than farmed animal meat, both due to the living and dietary habits of such animals and, especially, to the use of lead-based ammunition. The impact of wild game meat on the overall exposure of general consumers is negligible. However, the category of hunters eating meat of wild game shot using lead ammunition can be considered at risk.
