The role of shellfish in prehistoric economies is usually cited for coastal populations. However, in front of more or less large archaeological shell-midden, nothing is known about their real outcome on coastal subsistence. The same can be said for the part of the molluscs in comparison with terrestrial food or with bred animals. Such can not be resolved without a transcription from archaeological remains into nutritive units. Within this paper the translation of an archaeological remain, the shell, from a fresh food, the weight of meat, has been studied.
