It has been established that sugar cane production was an important factor in the deep transformations that took place in Chinese society during the Sung period, particularly in the fïeld of économies. After a brief review of the history of sweeteners in Ancient China, this article présents the development of sugar technology in 12th century China and shows in détail how progress in the various types of cane sugar about in terms of quality and the types of clients for which they were targeted.
