By its diversity and importance within the departmental and regional agricultural space, the Var vineyard represents a good dynamic structural example of the French Mediterranean vineyards in full transformation. With its 43 .000 hectares in 1980, this vineyard used to occupy the two-thirds of the Varois agricultural spaces, virtually a monoculture in much of the department. But between 1959 and 1980 this vineyard lost 30% of its area. The vineyards yielding ordinary table-wines were the first concerned in the decline whereas a considerable effort was made (choice of varieties).
