In der vorliegenden Doktorarbeit ist die Entwicklung von "rouladenartigen" Functional Fish Foods aus mikrobiell rekonstituiertem "Fischfleisch" beschrieben. Im Theorieteil der Arbeit wurden Inhalte zur traditionellen Rouladenform und ihrer möglichen technischen Umsetzung als konzentrischer Doppelstrang aus Mantel und Füllung zusammengetragen. Dabei wurde die Koextrusion als Technik beschrieben, mit der die Umsetzung der Grundoperation zur Produktstrangformung erfolgen kann. Anhand der entwickelten labortechnischen Produktionsanlage wurde eine Verfahrensbeschreibung formuliert.
