Die Hydrolysierbarkeit von Carbonsäureestern, die als Aromastoffe und als Bestandteile von Lebensmittelverpackungsmaterial Bedeutung haben, spielt bei der toxikologischen Bewertung dieser Substanzen eine wichtige Rolle. Das Ziel der Studie war es, Struktur-Wirkungsbeziehungen aus der enzymatischen Hydrolyse von Carbonsäureestern in biologischem Material abzuleiten.
