We know that various types of cooked pork meat held an important place in people's diet during Antiquity but we do not know exactly what the types were since the texts mentioning them give only scant descriptions. We know however that these specialities were apprelated by a vast number of customers, among the elite as well as among the plebeians who could buy them in the streets. Recipes must have therefore been quite diverse and the products very different in quality. Until now the osteological data available for the period of Antiquity was too limited to be usefully connected to the information found in the texts.
