PENGEMBANGAN FRAMEWORK MANAJEMEN RISIKO RANTAI PASOK HALAL UNTUK RUMAH POTONG AYAM (RPA)

Halal has been a term applied to all aspects of a muslim's life, but for now it is more often used to refer to matters involving the production and consumption of food. Apart from halal, there is also the term toyyib which means that halal products must be healthy, non-toxic and not harmful to health. Based on data from the Badan Pusat Statistika, compared to beef and lamb, the most produced meat in D. I. Yogyakarta Province, especially from 2018 to 2021, namely chicken meat. However, in reality, most consumers who buy halal meat products do not understand halal supply chain management. Therefore, Chicken Slaughterhouses (RPA) play a very important role in maintaining the supply chain's halalness, so it is necessary to carry out an introduction regarding things that can become risks along with their causes and consequences. This research was conducted to identify risks, analyze, and to propose risk mitigation strategies in Chicken Slaughterhouses (RPA). The research was conducted at RPA X and Y using the Supply Chain Operation Reference (SCOR) Model and the House Of Risk (HOR) approach. Based on the research, 27 risk events and 24 source risks were found. Then, 10 risk priorities were obtained and 11 risk mitigation strategies were proposed.
