Abstract : It is generally accepted today that cheese constitutes an important element of the heritage of mountain areas. But for how long has it enjoyed this status ? Since the inter-war period, alpine geographers have played a significant role in this development by frequently underlining the relationships between cheese and mountain areas. Certainly, cheese is not an object of geographical study in itself but, through their detailed descriptions of pastoral ways of life, geographers may be considered as the « inventors » of the specificity of alpine cheese production, a specificity based on diversity. Since the 1950-70 period, in line with the changes taking place in the geographic discipline, cheese production has been considered mainly from the point of view of its role as a transformation activity. The diversity and the wealth of mountain cheese production are still far from being of major interest to the media, even though the « East-Central » Emmental crisis gave rise to calls for the protection of Savoyard cheeses. It was not until the beginning of the 1990s that the cheeses declared as being « local » or « traditional » became cultural objects and joined the ranks of heritage products in the writings of geographers.De l'illustration du genre de vie pastoral au produit patrimonial. Résumé : II est admis aujourd'hui que le fromage constitue un élément important du patrimoine de la montagne. Depuis quand a-t-il ce statut ? Dès l'entre-deux-guerres, les géographes alpins ont fortement contribué à affirmer les liens entre fromage et montagne. Certes, le fromage n'est pas un objet d'étude en soi, mais en décrivant longuement les genres de vie pastoraux, ils peuvent être considérés comme les « inventeurs » de la spécificité de la production fromagère alpine ; une spécificité faite de diversité. A partir des années 1950-1970, conformément à l'évolution de la géographie, la production fromagère est surtout considérée sous l'angle de son outil de transformation. La diversité et la richesse de la production fromagère montagnarde sont encore loin d'être des thèmes porteurs, même si la crise de l'Emmental « Est-Central » suscite des revendications en faveur de la protection des fromages « savoyards ». Il faut attendre le début des années 1990 pour que les fromages qualifiés, cette fois, de « terroir » ou de « traditionnels » deviennent un objet culturel et accèdent au rang de produit patrimonial, dans les écrits des géographes.Delfosse Claire.
