This work revolves around the study of phase diagrams of ferromagnetic spin systems at very low temperature in dimension 2. Starting from tools that were developped in the framework of the Ising model - which is the model of this class which we understand best - we try to illustrate the link between the fluctuation of macroscopic interfaces created by forcing the coexistence of two distinct phases and the completeness of the phase diagram, i.e. the complete description of the set of measures for the system. Some of these tools are of geometric nature and can be adaptated to a large class of spin models provided that they have a good notion of interfaces. We present those tools as well as some leads to adaptate them to some more general spin...
