The influence of oxygen transport on the perishing behaviour of packaged food had been studied in a previous paper, proving that a precise and measuring tracking of the oxygen transport within food is desirable, but that, on the other hand, stuff values required for rating temporal and local progression of the reaction between oxygen and foodstuffs are not available. A process has now been developed using food models for measuring the transport of and the reaction with oxygen and for comparing these with the calculated values. Measuring systems have also been developed for determining the required stuff values, e. g. solubility, diffusion constants and specific reaction rates of oxygen in respect with food
