.Early in 1978, at the same time of the incorporation of the Institute for Food Technology and Packaging into the Fraunhofer-Gesellschaft, a laboratory for organic trace analysis was founded. The empirical results gained in this laboratory as well as the developmental work resulting therefrom are discussed in this paper which comprises the following three topics: objective measuring of quality and change in quality of foodstuffs, identification and formation of quality reducing trace components in packaging materials, dynamics of interaction between packaging material and packaged product.
