In the Midi, the genesis of the shift to quality wine can be traced to two modernising trends. In l'Aude a strong internal network developed a form of modernisation which embraced différent territorial references. In the Hérault, however, competing networkscheracterise this departe- ment's form of modernisation. In both cases, theses processes have sparked the emergence of a new professional group structured around the vocation of winemaking and marketing.Le passage au vin de qualité dans le Midi trouve son origine dans l'action de deux figures modernisatrices. Il se concrétise par une inscription territoriale différenciée dans l'Aude (modernisation de l'intérieur) et dans l'Hérault (modernisation par la bande).
