Alain Guerreau. Wheat and bread measurements in Mâcon (14th-18th century) For studying wheat and bread, we have many documents, the most interesting of which are « trials », official procedures which permited to determine number and weight of loaves of bread which can be obtained from a given quantity of wheat. These documents were studied in Mâcon in order to follow the evolution of many kinds of parameters for these trials from 1369 to the beginning of the 19th century. For a correct understanding of these documents, they must be seen in relation to local history and be examined over a long period of time.
