The meat industry needs minimal hygienicsanitary procedures throughout the production, storage, distribution and marketing process, especially considering that these are inputs that are sensitive to physiological, biochemical and microbiological changes in their food matrix. Thus, the objective was to evaluate the hygienic and microbiological conditions of food and surfaces in a meat and meat products processing unit in Pernambuco, Brazil.
