The aim of this study was to produce light-coloured protein isolates from sunflower press cake on a pilot plant scale. Mild-acidic extraction at pH 6 prevented discolouration due to co-extracted phenolic compounds and facilitated the adsorptive removal thereof using a styrene-divinylbenzene resin, coupled with ion exchange. To enhance protein solubility under acidic conditions, NaCl was added. Two concentrations (2 and 1.3 mol/L) were compared, previously identified as being most suitable for protein extraction and polyphenol adsorption.
