The impact of selected oenological methods on polyphenol contents and sensory wine quality of the vine varieties vitis vinifera Riesling, Pinot noir and Cabernet franc.

Zielsetzung der Arbeit war es zu untersuchen, inwieweit ausgewählte oenologische Verfahren der Weißwein- bzw. Rotweinvinifikation die Weininhaltsstoffe und damit verbunden die organoleptischen Eigenschaften der Weine verändern. Die technologische Beeinflussung der Polyphenolgehalte und deren Korrelationen mit ausgewählten sensorischen Attributen der Weinqualität standen dabei im Vordergrund. Im Weißweinbereich konnte gezeigt werden, dass der Entrappungsvorgang in Kombination mit der Vollernterlese vor allem bei fäulnisbelastetem Lesegut einen negativen Einfluss auf die Weinqualität ausübte. Dabei spielte besonders die Polyphenolfraktion der Flavan-3-ole eine entscheidende Rolle, da ihre Gehalte im Wein mit dem Trubgehalt als Indikator für die mechanische Belastung positiv korrelierten und höhere Gehalte den untersuchten Weinen verstärkt grüne und grasige Noten verliehen. Der aus der Praxis der Mostvorklärung bekannte allgemeine Zusammenhang „Je niedriger der Resttrubgehalt, desto besser die spätere Weinqualität“ konnte mittels der durchgeführten Korrelationsanalyse mit der polyphenolischen Verbindung Tyrosol in Zusammenhang gebracht und dies statistisch abgesichert werden. Je höher die Resttrubgehalte waren, desto höher waren auch die Tyrosolgehalte und desto negativer wurde die Reintönigkeit, die Geschmacksqualität und die Gerbigkeit der Weißweine bewertet. Der Vergleich verschiedener Rotweinbereitungstechniken zeigte, dass die Kombination der beiden klassischen Verfahren Maischeerhitzung und Maischegärung vor allem in schwierigen Jahrgängen bezüglich Reife und Gesundheitszustand der Trauben farbintensive Rotweine mit einen kräftigen Polyphenolgerüst erzeugte. Die Verbesserung des Geschmackes mit steigendem Gesamtpolyphenolgehalt der Rotweine korrelierte dabei vor allem positiv mit der Gruppe der Flavonoide. Die Messung der Rotweinfarbe (520 nm) zeigte einen positiven Zusammenhang mit dem gerbstoffbetonteren Geschmack der Weine und auch mit dem Attribut „Körper“.The aim of this thesis was to examine in how far oenological methods of white wine or red wine vinification affect wine ingredients and thus sensory characteristics. The results of the technological influence on polyphenol contents and their correlation with chosen organoleptic parameters of wine quality were the central aspect. White wine: It was shown that the destemming process in combination with machine harvesting had a negative impact on wine quality, above all with rotten grapes. Particularly the polyphenolics fraction of the flavan-3-ols ((+)-catechin and (-)-epicatechin) played a decisive role since polyphenolic contents in wine were not only significantly correlated to the volume of lees as indicator for mechanical stress but also to a decrease in wine quality. Higher flavan-3-ol concentrations affected the sensory quality negatively. The wines increasingly acquired green and grassy flavours. The smaller the residual lees portion, the better the wine quality afterwards. This general relation, well-known from must clearing practice, could be traced back by means of the performed correlation analysis to the polyphenolic compound tyrosol and could be statistically confirmed. With a significant correlation between tyrosol content, residual lees volume and the results of sensory evaluation, this polyphenolic wine ingredient could be related with wine quality. The higher the residual lees portions, the higher the tyrosol contents too and the more negative the sensory evaluation of cleanness of taste, quality of taste and tannic taste impression. Red wine: The combination of the two methods mash heating and skin contact fermentation produced red wines with increased polyphenol contents and thus increased colour intensity. Above all in vintages problematic with regard to ripeness and rot, full-bodied and colour-intensive red wines could be made with the combination variant. Taste improvement with increased total polyphenolics in the red wines correlated primarily with the group of flavonoids.
