The research described in this thesis concerns the development and application in food microbiology of molecular identification and detection techniques based on 16S rRNA sequences. The technologies developed were applied to study the microbial ecology of two groups of bacteria, namely starter cultures and sporeforming spoilage bacteria, that are of importance to the food industry and in particular the dairy industry.In this Chapter the results are summarized and discussed in relation to recent developments.
