Towards an integration of printed and digital learning materials for food chemistry education into a full e-learning course

This paper describes the first stage in the design, development and evaluation of an electronic course book for Food Chemistry. Previous work on the development of digital learning materials for Food Chemistry resulted in several distinct modules for the introductory course `Food Chemistry¿. Evaluations had shown that the students appreciated these modules. However the course as a whole was not appreciated and the effectiveness of the course as a whole was not satisfactory. Students did not recognize the connection between the different digital modules nor did they recognize the connection between the digital and non-digital learning materials. In order to provide the students with a more integrated and more motivating learning experience an electronic course book system is being developed. The paper describes the functional requirements for the electronic course book system and initial experience with the requirements that have been realized
