This paper reports findings from research with producers and consumers, with the objective to discover dynamics and interactions between both sides of the meat chain. The focus is on value-related aspects such as animal welfare and environmental issues. Analyses show relevant differences in perceptions, attitudes and behaviour, both between pork and beef producers and between consumer segments. Producer motivations to produce "superior" quality mainly relate to economic incentives, whereas consumer motivations to buy are dominated by health and safety concerns
