Food allergy, an abnormal immunological response due to sensitization to food proteins, has become an important food safety problem, especially in industrialized countries. Together with hen’s egg, fish, crustacean, peanut, and wheat, tree nuts such as hazelnut (Corylus avellana), soybean (Glycine max) and cow’s milk are associated with severe allergic reactions.
