Phytosterols are omnipresent in plants, as they play an important role in cell membrane stability and as signal transducers. Over the last few decades, the scientific interest in phytosterols has peaked. Most of the interest has focused on the cholesterol-lowering properties of phytosterols, but they may also interfere with the endogenous steroid hormone synthesis.
