Indonesia is a maritime country that is rich in biological resources, one of which is seaweed. Seaweed grows naturally in Indonesian waters, including brown seaweed. Sargassum sp. is one of the alginate-producing seaweeds. The purpose of this study was to evaluate the quality characteristics of the alginate of Sargassum sp. with different calcium oxide concentrations. This study used a completely randomized design (CRD) with one factor, namely treatment with the addition of 3%, 4%, and 5% calcium oxide concentrations. The results showed that the alginate produced had a pH value of 7.36% - 7.66%, a moisture content of 12.16% - 16.88%, an ash content of 29.78% - 30.41%, a viscosity of 8.5% - 20.33%, and a yield of 13.14% - 20.33%. Based on th...
