This thesis explores the properties of different stochastic processes within an optical trapping setup. The manipulation of Brownian trajectories in experimental optical traps relies on strong hypotheses regarding ergodicity and stability of the process, which are here experimentally demonstrated. By adding a numerically generated random radiation pressure force, the system is connected to an auxiliary engineered bath which allows to implement an analogue of active matter. We explore the resulting non-Brownian trajectories and non-equilibrium thermodynamic features.
