El pescado ha sido relacionado en numerosos casos de ETA siendo microorganismos los agentes causales mayormente involucrados. El pescado es considerado un alimento nutritivo y debido a sus propiedades intrínsecas susceptible al deterioro y contaminación microbiológica a lo largo de la cadena alimentaria generando un riesgo a la salud de consumidores.
