Bawang merah adalah salah satu tanaman holtikultura yang rentan mengalami kerusakan apabila penanganan pasca panen tidak dilakukan dengan baik. Penyebab kerusakan bisa terjadi akibat pengaruh fisik, kimiawi, mikrobiologi, dan fisiologi.
