Buah mangga termasuk buah musiman yang tidak tersedia sepanjang tahun, buah ini memiliki banyak varietas dan karakteristik masing -masing. Karakteristik buah mangga pasca panen mempengaruhi nilai ekonomi dari buah tersebut. Penelitian dimaksudkan untuk mengetahui total asam tertitrasi (TAT), kandungan vitamin C, padatan terlarut (PTT) serta kualitas fisik buah (warna dan kelunakan). Penelitian dilaksanakan dengan mini percobaan untuk membuktikan karakteristik buah mangga varietas Indramayu pada dua level kematangan dengan metode percobaan menggunakan acuan penelitian terdahulu.
