Indonesia merupakan salah satu sumber utama teripang di dunia dengan total produksi yang tinggi untuk konsumsi domestik dan pasar ekspor. Teripang memiliki potensi sebagai sumber makanan tradisional, obat-obatan, dan pangan fungsional karena komponen gizi yang tinggi pada teripang. Tujuan penelitian ini adalah untuk mengetahui perbedaan karakteristik gizi teripang yang diperoleh secara kimiawi (ekstraksi etanol 20%, 25%, dan 30%) dan perlakuan fisik (perebusan dan pengukusan).
