Nata is a final product from the fermentation process that used Acetobacter xylinum bacteria which produces cellulose that has chewy texture, white color and resembles a gel. These bacteria can grow and thrive in media containing a carbon source. Seaweed contains carbohydrates that can be used as a carbon source for the growth of Acetobacter xylinum bacteria. The aimed of this study was to determine the optimum concentration of Gracilaria sp. and its effect on the characteristics of nata de seaweed product.
