Storage spaces of Western Roman rural settlements : granaries and grain preservation techniques in the Ist cent. BC – Vth cent. AD countryside (Italy, Iberian peninsula, Gaul and Germania)

Les greniers et les espaces de stockage à céréales représentaient des équipements indispensables au sein des établissements ruraux d’époque romaine, car ces denrées constituaient la base de l’alimentation humaine, dans les campagnes comme dans les centres urbains. Toutefois, la reconnaissance de ces bâtiments en milieu rural pose problème pour de nombreuses raisons. Tout d’abord, le stockage des grains demeure archéologiquement discret, parce que ces produits étaient stockés en vrac à même le sol. Ils ne nécessitaient donc pas de conteneurs céramiques qui, comme dans le cas du vin et de l’huile, permettent d’identifier plus aisément les chais. L’arasement des structures et la disparition des niveaux de sols de la plupart des villas et établissements ruraux mis au jour, sont d’autres facteurs limitant fortement l’identification de ces bâtiments. En dépit de ces contraintes, l’approfondissement de la question du stockage rural demeure important pour comprendre la place et le possible rôle économique de la céréaliculture. Cette thèse en deux volumes porte sur l’étude de ces bâtiments à l’échelle de l’Occident romain (Péninsule italienne, Péninsule ibérique, Gaules et Germanies) et à travers six siècles, du Ier s. av. au Ve s. apr. J.-C. Le volume de synthèse est divisé en quatre chapitres. Le premier résume les étapes principales de la recherche archéologique concernant les greniers et les espaces de stockage à céréales. Le deuxième chapitre présente les sources littéraires et épigraphiques, et analyse la démarche interprétative pour l’étude de ces bâtiments à travers des études de cas. Le troisième chapitre est consacré aux facteurs de risque pouvant entraîner la perte des réserves à blé et aux techniques de conservation mises en place pour y répondre. La typologie établie pour les greniers et les espaces de stockage ruraux se base sur l’analyse structurelle et architecturale de ces vestiges et concerne de façon unitaire le milieu géographique retenu. Le dernier chapitre comporte un essai de quantification des capacités de stockage des bâtiments recensés, ainsi que des aperçues sur le stockage rural dans trois régions comprises dans cette enquête : la Gaule Narbonnaise, l’Émilie-Romagne, la région vésuvienne. Le catalogue des sites inclus dans le deuxième volume vient intégrer et compléter ce travail de thèse.Granaries and grain storages were essential facilities of Roman rural settlements. Grain constituted the base of the human diet, both in the countryside and in the urban settlements. However, the identification of these buildings in the countryside is quite difficult because the storage of cereals leaves few archaeological traces. Unlike wine and oil that were stored inside ceramic containers which make their warehouses easier to identify, grain was stored in bulk on the ground. The destruction of the structures and the disappearance of the original ground levels, which is typical for most of the unearthed remains in villas and other rural structures, is another factor which greatly limits the identification of these buildings. Nevertheless, rural storage structures deserve to be studied to understand the places and the possible economical role of grain cultivation. This dissertation is composed of two volumes, containing four chapters dedicated to the study of granaries in the western part of the Roman Empire (Italy, Iberian Peninsula, Gaul and Germania) in a period spanning six centuries, from the Ist cent. BC until the Vth cent. AD. The first chapter summarizes the past and present archaeological research on the granaries. In the second chapter, literary and epigraphical sources mentioning the grain storage facilities are analyzed and used to identify granaries in the archaeological record. Different case studies are also discussed. The third chapter first presents the risk factors which may have caused the loss of the grain stocks and the possible preservation techniques used. Second, it presents the typology of the granaries in the countryside, based on the structural and architectural analysis of their remains in the chosen geographical area. The last chapter is an evaluation of the storage capacities of the catalogued buildings, that also provides insight into the storage structures and techniques used in Gallia Narbonensis, Emilia-Romagna, and the region around Mount Vesuvius.
