Ce travail de thèse propose de développer et de mettre en œuvre des approches statistiques originales motivées par des questions en analyse sensorielle dont l’objectifest de caractériser et décrire des produits testés par des panels de sujets. La DominanceTemporelle des Sensations (DTS) est une méthode d’analyse sensorielle temporelle danslaquelle des sujets indiquent la séquence des sensations perçues durant la dégustationd’un produit.
