La chitine est le second biopolymère le plus répandu sur terre après la cellulose. On la retrouve essentiellement dans les crustacés, les insectes et les champignons. Actuellement, ce polysaccharide est majoritairement extrait des carapaces de crustacés dont le procédé comprend deux étapes importantes : la déminéralisation et la déproteinisation. Bien qu'efficace, cette méthode reste à ce jour polluante, énergivore et chronophage. Dans ce manuscrit, nous nous sommes focalisés sur les deux sources de crustacés et d'insectes.
