The main objective of this research work was to optimize the microencapsulation process of the phenolic compounds present in the sunfo plant (Clionopodium Nubigenum Kunth Kuntze) by spray drying. For this purpose, an experimental response surface design was proposed using the numerical optimization method, with the study factors (A) inlet air temperature (130; 140; 150 °C) and (B) feed flow rate ( 500; 600; 700ml/h). The materials used as wall material to form the polymeric matrix were gum arabic and maltodextrin.
