Food preservation is one of the most important concerns of food engineering and its importance is reflected in a longer shelf life. In this work it was evaluated how temperature and panela in different concentrations affect the diffusivity coefficients of water (De,w) and solids (De,s) in the osmodehydration (OD) of Physalis peruviana with the application of ultrasound (40 kHz) and agitation (50–100 rpm). For this purpose, the fruits were osmodehydrated in panela at concentrations between 30 and 60% (by weight) and temperatures between 30 and 60 °C for a period of 7 hours, after which, the values of De,w and De,s.
