PENGARUH PENAMBAHAN EKSTRAK KULIT LEMON DAN SARI LEMON (Citrus limon) TERHADAP KUALITAS SENSORI SELAI UMBI BIT

Beetroot can be processed into jam, however the unpleasant aroma of beetroot is very strong and cannot be removed by heating, this aroma is not very liked by consumers so it is necessary to add other ingredients to cover the aroma. Lemon fruit has a distinctive aroma which is often used as an additive. in food because it can reduce unpleasant odors. The citric acid and essential oils found in lemons are used to enhance the taste and reduce the unpleasant smell of food. The purpose of this study was to determine the effect of adding lemon peel extract and lemon juice on the sensory quality of beetroot jam and the best formulation of adding lemon peel extract and lemon juice to beetroot jam. The research design used was Completely Randomized Design (CRD). This study obtained 10 treatments and each treatment was repeated 3 times with testing parameters including analysis of water content, pH, total dissolved solids, vitamin C, antioxidants, smearing power and organoleptic (taste, aroma, color, texture, appearance and preference). ). The data obtained were processed using analysis of variance. If it has a significant effect, then the data obtained is continued with a differentiating test using the DMRT (Duncan's Multiple Range Test) test. The results showed that the addition of lemon peel extract and lemon juice to the tuber jam gave little significant effect on water content, pH, total soluble solids, vitamin C, antioxidants, smearing power and organoleptic properties. The best treatment for all parameters was found in the E3S3 treatment (6% Lemon Peel Extract: Lemon Juice 6%) with 27.31% water, 4.85 pH, 83,11% total dissolved solids, 3.25 mg/100 gram , antioxidant 20.56%, smearing power 13.83cm and taste organoleptic test 3.05 with good results, aroma 1.83 with very good results, color 3.89 with quite interesting results, texture 4.09 with a lot of results, the appearance of 3.51 with quite interesting results and the favorite 4.40 with the results of likes
