Zadatak ovog završnog rada bio je usporediti iskorištenje mesa goveda pasmine Holstein i Simental. U teorijskom dijelu ovoga rada govori se o samim pasminama Simental i Holstein, liniji klanja goveda, kategorizaciji goveđeg mesa te o klaoničkoj vrijednosti. Za dobivanje potrebnih rezultata određivana je prosječna masa, randman, kalo hlađenja, masa hladnih polovica, udio goveđeg mesa bez kosti te udio otpada posebno kod Simental pasmine i posebno kod Holstein pasmine, tijekom 20 dana klanja u jednoj klaonici.
