COMPARISON THE UTILIZATION OF BEEF MEET FROM HOLSTEIN AND SIMMENTAL CATTLE BREEDS

Zadatak ovog završnog rada bio je usporediti iskorištenje mesa goveda pasmine Holstein i Simental. U teorijskom dijelu ovoga rada govori se o samim pasminama Simental i Holstein, liniji klanja goveda, kategorizaciji goveđeg mesa te o klaoničkoj vrijednosti. Za dobivanje potrebnih rezultata određivana je prosječna masa, randman, kalo hlađenja, masa hladnih polovica, udio goveđeg mesa bez kosti te udio otpada posebno kod Simental pasmine i posebno kod Holstein pasmine, tijekom 20 dana klanja u jednoj klaonici. Rezultati su pokazali da Simental pasmina ima veći randman od Holstein pasmine.In this Bachelor thesis main goal was to compare utilization of meat from two separate cattle breeds, Holstein and Simental. First part of this battle thesis is oriented one describing these two breeds of cattle, such as cattle slaughter line, categorization off beef and slaughter value. For most precise results, there was determined average weight, meat yield, refrigeration loss, weight of refrigerated halves, boneless beef content and lastly, the share of waste for both of studied breeds. Data were collected in twenty day period in one slaughterhouse. Finally, results have shown that Simental breed has larger meet yield then Holstein cattle breed
