Postharvest is the conservation of the shelf life of fresh fruits and vegetables; supported by a country's ability to guarantee access to food for all citizens through methods that minimize losses. This research work illustrates about the potential shown by studies in the management of postharvest fruit and vegetables and the high incidence in research, innovation and technological development of the production, academic and business units.
