Cheese is a derivative of milk that must be processed in hygienic conditions, transported and stored with due care to avoid contamination. The objective of this study was to investigate the level of dirt on artisanal cheese type coalho sold in the city of Fortaleza, Brazil. The methodologies used were the macroscopic survey of foreign material (FM) and biological contamination microscopic investigation (BC). The foreign material inspection was made on samples; while BC was performed by the sedimentation method. The presence of insects (ants) was found in two samples of cheese.
