Background: Food irradiation is a non-thermal, energy-efficient, non-chemical and physical method of food preservation in which the food is exposed to various ionizing and non-ionizing radiations. It is used to extend the shelf-life of a product by not adversely affecting its nutritive parameters. Scope and approach: The present review deals with the current understanding of the effect of ionizing and non-ionizing radiations on different properties of fruits and vegetables. Conclusions: Studies have revealed the positive effects of irradiation on physical and nutritional properties of different fruits and vegetables followed by significant reduction in microbial load during storage.
