The purpose of this research is to hydrolyze red meat of striped tuna (Sarda orientalis) with HCl as a catalyst to obtain protein hydrolysate which will overcome the shortcoming of previous methods, increase economic value of red meat of striped tuna, and reduce solid waste of tuna processing industry. Red meat of striped tuna is rich in protein and a perfect material for hydrolysis to obtain protein hydrolysate with 22.79 ± 0.69% of protein content. Suitable conditions of hydrolysis reaction are determined as follows: HCl concentration is 0.1 M, ratio of HCl volume to substrate is 34:01 (v:w), reaction time is 10 min, and reaction temperature is 30°C.
