Protein hydrolysate has a variety of applications in food industry. A combination of heat and HCl as a catalyst was employed in this research to hydrolyze peanut meal powder to generate protein hydrolysate solution. Peanut meal powder was a perfect source to produce protein hydrolysate solution in which high percentage of protein content was 51.84 ± 0.66%. The perfect conditions of hydrolysis reaction corresponding to each parameter included 160°C of reaction temperature; 35:1 (v:w) of ratio of HCl volume to substrate; 0.1 M of HCl concentration; and 10 min of reaction time.
