The aim of this thesis was to unravel the microecosystem composition of 13 spontaneously fermented wheat sourdoughs, originating from regions of Greece not previously assessed, via the combination of culture dependent and independent approaches. Then, further investigation of the technological and safety attributes of the associated microbiota was performed, for potential application of the sourdough isolates as starters or adjunct cultures in food fermentations. In the first study, the microbial ecology of the 13 Greek wheat sourdoughs was identified by combining both culture dependent and independent approaches.
