Chitin is the second most common biopolymer on earth after cellulose. It is mainly found in crustaceans, insects and fungi. Currently, this polysaccharide is mainly extracted from crustacean shells. The process includes two important steps: demineralization and deproteinization. Although efficient, this method remains polluting, energy consuming and time consuming. In this manuscript, we focused on the two sources of crustaceans and insects. The latter was dictated by the emergence and development of the insect biorefinery. Indeed, insect cuticles have the particularity of being naturally low in minerals (90%) in non-conventional media of ionic liquid type.
