Celem przeprowadzonych badań była ocena zawartości wybranych składników bioaktywnych w jabłkowych wytłokach poprasowych w zależności od sposobu przetwarzania owoców i materiału odpadowego. Materiał badawczy stanowił błonnik jabłkowy naturalny, błonnik jabłkowy poekstrakcyjny oraz wytłoki poprasowe (mokre i suche). Oznaczano zawartość suchej masy, zawartość związków polifenolowych oraz całkowity błonnik pokarmowy.
