International audienceThe excavation of the Dr Henri-Henrot boulevard in the city of Reims, with its archaeological levels preserved in water, is the best documented site in terms of plant macro-remains. With a total of 44 samples that yielded 13,255 remains, 110 of which were charred and 13,145 soaked (waterlogged), it allowed for the identification of 328 taxa. The wealth of the carpological spectrum identified therein is one of the most extensive for a metropolitan Roman site. This collection makes it possible to understand the changes that occurred in the production and consumption of plant foods between the turn of the era and the beginning of the 4th c. (around 307 AD).
