Olive mill technology generates a considerable amount of solid (olive pomace) and liquid (olive mill wastewater) by-products during olives milling season, usually between November and March. These wastes represent a great challenge for olive oil producers since they must find technical, environmental and economical solutions to manage these by-products. The main objective of this thesis was to explore and propose a complete cycle of olive mill wastes treatment. This is in the framework of a zero liquid and waste discharge approach and promotes the circular economy concept.
