En esta tesis se estudian aspectos relevantes de las soluciones de gelatina desde el punto de vista reológico y fisicoquímico en los regímenes de concentración ultra-diluido, diluido y concentrado. Del análisis teórico - experimental se concluye que el comportamiento microestructural estas soluciones depende de la concentración macromolecular, de la temperatura y de la composición electrolítica del solvente. En el régimen diluido se produce agregación de moléculas de gelatina. Este fenómeno se estudia mediante la medición de la viscosidad específica de soluciones maduradas a distintas temperaturas y se interpreta a través de la teoría de Smoluchowski.
