Effects of ozone gas on the microbiological and chemical quality of mulberry fruit (morus nigra l.)

Üzümsü meyveler, oldukça kısa raf ömrüne sahip, kolay bozulabilen gıdalardandır. Gıda endüstrisi için nispeten yeni bir dezenfektan olan ozon, bazı taze meyve ve sebzelerin raf ömrünün uzatılması amacıyla denenmiş ve üzümsü meyveler dâhil birçok üründe başarılı sonuçlar elde edilmiştir. Bu çalışmada, taze karadut meyvesinin bazı önemli kalite parametrelerindeki değişimler, normal hava ve ozon atmosferinde (0,3 ve 2,4 ppm) 2⁰C’de ve %95 bağıl nemde 6 gün süren depolama boyunca incelenmiştir. İzlenecek kalite parametreleri toplam mezofilik aerobik bakteri (TMAB), Enterobacteriaceae ve maya-küf sayıları, ağırlık kaybı ve örneklerin askorbik asit ve toplam monomerik antosiyanin miktarları olarak belirlenmiştir. Depolamanın ilk evresinde, incelenen tüm mikroorganizma türlerinin sayıları ozon atmosferinde depolanan örneklerde hava atmosferinde depolanan örneklere göre istatistiksel açıdan önemli düzeyde düşük çıkmıştır (p0.05). Bu durum, Enterobacteriaceae familyasına ait mikroorganizmalar için farklı gerçekleşmiş ve depolama periyodu sonunda 2,4 ppm ozon atmosferinde depolanan örneklerdeki Enterobacteriaceae sayısı (3,67±0,11 log kob/g), 0,3 ppm ozon atmosferinde depolanan örneklerden (5,38±0,07 log kob/g) ve normal hava atmosferinde depolanan örneklerden (5,87±0,03 log kob/g) istatistiksel açıdan daha düşük bulunmuştur (p<0.05). Muhtemelen üründe gerçekleşen terlemeyi sınırlandırması nedeniyle, ozon atmosferinde depolama meyvede meydana gelen ağırlık kaybını azaltmış ve bu etki artan ozon konsantrasyonuyla artmıştır. Ozon atmosferinde depolama uygulaması örneklerin toplam monomerik antosiyanin içeriğinde herhangi bir değişime neden olmazken, askorbik asit düzeylerinde bazı minor değişikliklere yol açmıştır.Berries are perishable fruits with a very short shelf life limited by weight loss, color changes, microbiological deterioration, etc. Ozone, a relatively new agent for food industry, was examined to extend the shelf life of many fresh fruits and successful results were achieved in some products including berries. In this study, changes in some important quality parameters of fresh black mulberries were investigated during storage at 2°C and 95% RH for 6 days in atmospheres of air and ozone (0.3 and 2.4 ppm). The selected quality parameters of mulberry samples were the counts of total mesophilic aerobic bacteria (TMAB), Enterobacteriaceae, yeast-mold, weight loss and the contents of ascorbic acid and total monomeric anthocyanins. On the first sampling day, the numbers of all microorganisms tested were significantly lower in the samples stored in ozone atmosphere compared to that in air (p0.05) from each other.
