PENGARUH PENAMBAHAN CARBOXYMETHYL CELLULOSE (CMC) DAN GLISEROL TERHADAP KARAKTERISTIK EDIBLE FILM PATI BIJI ALPUKAT (Persea americana Mill.)

Avocado seeds contain high enough starch, but often only the flesh is used, while the seeds are buried as waste. The high starch content of avocado seeds has the potential to be used as raw material for edible films but produces brittle characteristics and weak resistance to moisture so that the mechanical properties, namely tensile strength and elongation, are of low value. CMC can aim to improve compactness, strength, appearance, transmission rate of substances, and accelerate the formation of the film matrix, while glycerol as a plasticizer can reduce stiffness and increase film elasticity. The purpose of this study was to determine the effect of the addition of CMC and glycerol on the characteristics of the edible film of avocado seed starch. This research was conducted through several processes, namely the preparation of raw materials, the manufacture of avocado seed starch by extraction method, and the manufacture of edible film of avocado seed starch with a combination of different concentrations of CMC and glycerol. The design used in this study was a factorial Randomized Block Design (RBD) and consisted of 3 replications. Factor I is the concentration of CMC which consists of three levels ((12%), (24%), and (36%) w/w starch) and factor II is the concentration of glycerol which consists of three levels, namely ((1%), (1,5%), and (2% v/v). The results of this study indicate that there is no interaction between the concentration of CMC and the addition of glycerol on the characteristics of the edible film of avocado seed starch. The addition of CMC has a significant effect on the rate of water vapor transmission (WVTR) of edible films. The addition of glycerol has a significant effect on the transparency of the edible film. C3G2 is the best treatment which has the characteristics of thickness 0.19 mm, elongation 30.25%, tensile strength 0.22 MPa, solubility 50.46%, WVTR 5.301 gram/m2/day, and transparency 0.485 A546/mm
