This thesis focused on exploring the acceptance and the adoption of a novel food product derived by agri-food industrial by-products. Specifically, the main aim was achieved through three scales: a) the Food Neophobia Scale (FNS), b) the Food Technology Neophobia Scale (FTNS) and c) the Domain-Specific Innovativeness Scale (DSI), combined with a case study based on a hypothetical scenario in the metropolitan area of Thessaloniki. For this purpose, a qualitative research was conducted initially followed by a quantitative analysis of 384 one-to-one interviews.
